Entrepreneur Storytime: HoneyMoon Brewery

It’s been a long time coming and we couldn’t be more thrilled to hear Ayla Bystrom-Williams and co-owners James Hill and Amberley Pyles share the story of HoneyMoon Brewery. As citizens of The City Different, they were inspired and compelled to make The Beer Different. They’re introducing a new category of alcoholic beverage to the world by using Kombucha as a foundation to brew their beer, as well as a hybridized production process unique to their brewery. Through a dynamic balance of very traditional and very non-traditional brewing styles, they’ve been able to achieve a tasty, gluten-free, probiotic alcoholic beverage that is wonderfully different from any beverage you've probably enjoyed before.
 
As a client of the Santa Fe Business Incubator (SFBI), a Venture Accelerator Fund (VAF) 2018 winner, and a user of Los Alamos National Laboratories (LANL) facilities and folks to help develop the first Kombucha Beer produced in the Southwest, Ayla and the HoneyMoon team are experts at capitalizing on local and state resources. They’ve also done a kick-ass job at securing additional sources to fund their dream, like award money from the Amber Grant for Women and the whopper of all wins, $200,000 as the MillerCoors National Grand Prize Winner as part of the 2016 Miller Lite Tap The Future Business Plan Competition.
 
Join us in celebrating the marriage of kombucha and beer at the brand spankin’ new home of HoneyMoon Brewery! Nestled in between La Montanita Co-op and The Betterday Coffee Shop in the Solana Center sits a quaint 1,700 square foot space that’s been transformed into Santa Fe's newest taproom and Kombuchería. They’ll brew and serve us up their famous Honeymoon Artisanal Alcoholic Kombucha (as well as other local beers and wine) – you don’t want to miss this!
